Pumpkin Scones with Maple Cream Cheese
Pumpkin Scones
Makes approximately 12 small scones
2 Cups all purpose flour
1/3 Cup dark brown sugar (I like the molasses flavor but you can use light if you prefer)
1 Tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
5 Tablespoons cold butter, cut into small pieces
1 Cup pumpkin puree (you can either make your own or use canned)
2/3 Cup heavy whipping cream
Preheat oven to 375 degrees
In a bowl, combine dry ingredients: flour, brown sugar, baking powder, cinnamon, salt.
Cut in cold butter with a pastry blender or fork until crumbly (or a food processor if you prefer–don’t over mix)
Stir in pumpkin and cream until just combined
Turn out dough on a lightly floured surface. Knead dough a few times. Roll dough into a 1/2″ thick circle. Cut into Triangles or circles as you prefer. Place scones on a lightly oiled (or sprayed) pan and bake for 15-20 minutes or until golden brown. Serve with Maple Cream (recipe below)
Maple Cream Spread
Makes about 1 1/2 cups
1 (8-ounce) package cream cheese, softened
1/4 cup (1/2 stick) butter, softened
2 1/2 tablespoons maple syrup (add more or less to your taste)
Cream together cream cheese and butter in a large bowl with an electric mixer until fluffy. Gradually add maple syrup beat until well combined.
Serve the Maple Cream on the side with your fresh Pumpkin Scones.
Enjoy!
